Oatmeal Raisin Cookies

1 cup unsalted butter
1 ½ teaspoon vanilla extract
½ cup + 2 tablespoons sugar
2 cups flour
1 cup + 2 tblsp. firmly packed light brown sugar
2 large eggs
¼ teaspoon salt
2 tablespoons water
2 ¼ teaspoons baking powder
½ teaspoon baking soda
3 ¾ cups quick cooking oats
1 ½ cups raisins

Directions:

  1. Cream butter and both sugars well until light and fluffy.
  2. Add eggs, water, and vanilla, beat well.
  3. Add flour, salt, baking soda, baking powder and oats.
  4. Mix until blended.
  5. Stir in raisins.
  6. Chill dough 15 minutes. Drop by tablespoons onto foil-lined cookie sheets.
  7. Bake at 350 for 10 - 12 minutes. Cookies may not look "done," but be sure not to overbake.
  8. Cool on foil 1 minute, then transfer to cooling rack. Makes about 3 dozen cookies. Freezes well.
