Mama Lorraine's Kitchen

Lasagna in a Bun

  • 8 hoagie buns
  • 1 beaten egg
  • ¾ pound ground beef
  • 1 cup shredded mozzarella cheese, 4 oz.
  • 1 8 ounce can tomato sauce
  • ½ of a 1 1/3 oz. envelope dry onion soup mix, 1/4 cup
  • ¼ teaspoon oregano
  • ¾ cup ricotta cheese or drained cottage cheese
Slice off tops of buns and hollow out centers, leaving ½" thick shells. Reserve bread crumbs for another use.

Beef Mixture:
Brown beef and drain. Add tomato sauce, soup mix, and herbs. Cook, uncovered over low heat 5 minutes. Uncover, cook 5 minutes more, stirring frequently.

Cheese Mixture:
In bowl, combine egg, ricotta cheese and ½ cup mozzarella cheese. Spoon ½ of meat mixture into bottoms of rolls. Top with cheese mixture, then remaining meat mixture. Top with remaining mozzarella cheese. Replace bun tops. Wrap sandwiches individually in foil. Bake 20-25 minutes in 400 degree oven until hot. Makes 8 servings.
