Cranberry - Orange Bread
2 cups flour
¼ cup margarine
1 cup sugar
1 teaspoon orange rind
½ teaspoon baking soda
¾ cup orange juice
1 ½ teaspoon baking powder
1 egg, beaten
1 teaspoon salt
1 cup fresh cranberries, coarsely chopped
Optional: ½ cup chopped nuts
Directions:
Sift dry ingredients together. Cut in margarine. Combine rind, juice, and egg. Add to dry mixture, just stirring to moisten. Fold in berries and nuts. Turn into greased 9x5x3" pan. Bake at 350 degrees for 1 hour. Cool. Freezes very well. Makes 1 loaf.
