Barbecue Sides
This month, Mama Lorraine is cooking up some potato salad and cole slaw that you can serve with your favorite family barbecue recipes!
Potato Salad
- 2 pounds red new potatoes
- radishes, diced
- pickle cucumbers, diced
- 3 hard boiled eggs, one sliced, two cut up
- 1 or 2 green onions, chopped
- Fresh dill
- green pepper, diced
- 2 tomatoes, cut up
- Miracle Whip
Boil potatoes in skin. When cool, peel potatoes with small knife and cube. In large bowl, add cut up vegetables and Miracle Whip to taste. Mix well. Layer slices of one egg across top and sprinkle with paprika. Refrigerate until ready to serve. Makes 10-12 servings.
Cole-Slaw
- 1 cabbage
- 3-4 large carrots
- carrots
- sugar
- salt
- Miracle Whip
Grate cabbage and carrots into large bowl. Add about 3 tablespoons sugar, a dash of salt to taste, and enough Miracle Whip to make a creamy cole-slaw. Sprinkle with paprika for color. Should be a sweet tasting. Refrigerate until ready to serve.
