Apple Muffins
- ¼ cup (1/2 stick) butter, room temperature
- ¼ cup + 1/3 cup brown sugar (divided)
- ½ cup granulated sugar
- 1 egg
- 1 cup buttermilk
- 1 large yellow Delicious apple or other type, peeled and cut into ½" chunks.
- 1 ¾ cup flour
- 1 ½ teaspoon cinnamon
- 1 teaspoon baking soda
- ¼ teaspoon salt
- Preheat oven to 400 degrees.
- Grease 12- hole, full-size muffin tin, including area between openings.
- In a bowl, cream butter, the ¼ cup brown sugar, and granulated sugar until fluffy.
- Mix in egg.
- Quickly fold in buttermilk. Do not overmix.
- In another bowl, mix flour, cinnamon, baking soda, and salt.
- Add gradually to sugar-egg mixture, making sure there are no lumps but mixing no more than necessary.
- Fold in apple chunks.
- Fill each muffin cup nearly to top.
- Sprinkle 1/3 cup brown sugar on top of batter.
- Bake at 400 degrees for 15 minutes.
- Remove from pan and serve immediately.
Makes 12 muffins. Delicious warm.
